The next part of the ‘What Radicalized Me’ series is in the works. I am rewatching a few anime and looking at the music I listened to when I was in my formative years.
However, since the last post and now, I have been working through some things. Mostly health stuff. I have mental health stuff that I have been working with and even taking a semester off from school to work on it.
Additionally, I was diagnosed with Polycystic Ovarian Syndrome (PCOS) and have been trying to adjust to diet, insulin monitoring, and the medications I have been prescribed.
This is something that I have been having issues with because I am working on eating a low-glycemic diet, which is difficult because I eat a lot of pasta and potatoes. I love potatoes.
As such, I have lots of cookbooks to look at and am looking at how to make substitutes for things I eat currently. I am able to eat chickpea pasta instead of white pasta which is nice. I just need to make sure I can find the chickpea alternative for the pastas I use.
The next part of ‘What Radicalized You’ should be out prior to my next appointment, and I will be updating with my journey with PCOS and what does and doesn’t work for me.
